easy granola recipe

Granola close up

I was given this recipe five years ago by a friend. I cooked some up this morning to make my gluten-free mornings tastier and less rushed.

  • 6-8 cups rolled oats
  • 1 cup coconut
  • 1 cup raw, unsalted sunflower seeds
  • 1 cup flax seeds
  • 1 cup raw cashews
  • 1 cup raw pumpkin seeds
  • 1 cup raw almonds
  • 1 tablespoon cinnamon
  • 1 teaspoon salt
  • 1 cup maple syrup
  • 2 tablespoons vanilla
  • 1 teaspoon maple flavouring

Mix all dry ingredients together in large baking pan (I use a roasting pan). Combine syrup, vanilla and maple flavouring and pour over dry mix. Stir to moisten. Bake for 1 hour at 250°F, stirring occasionally to keep from burning. Eat as a cold cereal or sprinkle over fruit and yogurt.
